Mahshi is a labour of love in Egyptian households, often prepared in large batches for family gatherings and Ramadan iftars.
Egyptian stuffed vegetables — courgettes, peppers and vine leaves filled with a fragrant herbed rice mixture and simmered gently until tender.
Mix rice with dill, mint, salt and a little tomato to make the stuffing.
Fill hollowed courgettes and peppers loosely, leaving room for the rice to expand.
Arrange snugly in a pot, cover with the remaining tomatoes and enough water to reach halfway up.
Simmer covered for 40-45 minutes until vegetables are tender and rice is fully cooked.
Never pack the rice stuffing too tightly — it expands significantly as it cooks and can burst the vegetable.
