Kedjenou

Ivory Coast

Kedjenou means to shake in the Malinke language. The shaking rather than stirring is the signature technique.

Ivorian slow-cooked chicken — chicken and vegetables sealed in a clay pot or casserole and cooked entirely in their own steam with no added water. The national dish of Ivory Coast.
