Moi Moi

Nigeria

Made throughout Nigeria for celebrations and as a side dish. The banana leaf version has a superior flavour to foil.

Nigerian steamed bean pudding — black-eyed peas blended with pepper, onion and fish, steamed in banana leaves until set into a firm, flavourful pudding.
