Boerewors

South Africa

By South African law must contain at least 90% meat with specific spice requirements. No boerewors, no braai.

South Africa's iconic farmer's sausage — coarsely minced beef and pork with coriander and cloves in a long continuous coil. The centrepiece of every braai.

Chef's Tip

Do not pierce and keep as one coil — breaking it is bad braai etiquette.
