Malva Pudding

South Africa

Malva pudding has Cape Dutch roots and remains one of South Africa's most beloved desserts, found on menus across the country.

A rich, spongy South African dessert with a caramel apricot flavour, soaked in a warm cream sauce as soon as it leaves the oven — sticky, sweet comfort food.

150gsugar
2 tbspapricot jam
2eggs
1 tspbaking soda
200mlcream, for the sauce

Method

1

Beat sugar, eggs and apricot jam together until light.

2

Fold in flour and baking soda, and pour into a greased baking dish.

3

Bake at 180C for 35-40 minutes until risen and golden.

While still hot, pour over a warmed sauce of cream, butter and sugar, letting it soak in fully before serving.

Chef's Tip

Pour the sauce over while the pudding is still piping hot — this is what allows it to soak deep into the sponge.
