Armenian barbecue — the national obsession. Pork, lamb or vegetables grilled over charcoal or wood. In Armenia, the art of khorovats is a matter of enormous pride.
Season meat with onion, pepper, coriander and salt. Marinate 4 hours.
Thread onto skewers or grill directly.
Grill over charcoal, turning, until charred outside and juicy within.
Serve with lavash, fresh herbs and raw vegetables.
