Ingredients

300gkidney beans, soaked overnight
2tomatoes, pureed
1onion, finely chopped
2 tspgaram masala
3garlic cloves, minced
1 tbspginger, grated

Method

1

Boil the soaked kidney beans until tender, about 25-30 minutes.

2

Soften onion, garlic and ginger in oil, then add tomato puree and cook until thickened.

3

Stir in garam masala and cook a further minute until fragrant.

4

Add the cooked beans with a little of their cooking liquid, and simmer together for 15 minutes until rich and thick.

Chef's Tip

Simmering the beans a little longer in the gravy allows them to absorb the spices fully for deeper flavour.
