Ingredients

100gtamarind pulp (block), seedless
500mlhot water
120gjaggery or dark brown sugar
1 tspground roasted cumin
1 tspground ginger
1/2 tspKashmiri chilli powder
1/2 tspblack salt (kala namak)
1/2 tspsalt

Method

1

Break up the tamarind and soak in the hot water for 15 minutes. Squeeze and mash with your fingers, then strain, discarding the fibres.

2

Pour the pulp into a saucepan with the jaggery and spices.

3

Simmer for 15-20 minutes, stirring, until thick and syrupy.

4

Cool — it thickens further — and store in a jar. Keeps for 3 weeks in the fridge.

Chef's Tip

Taste for the balance of sweet and sour and adjust the jaggery. If the chutney is too thick, loosen with water.
