Okonomiyaki

Japan

The soul food of Osaka. The city argues fiercely with Hiroshima about whose okonomiyaki is superior.

Osaka's savoury pancake — a thick, eggy batter with cabbage and pork, griddled then layered with mayonnaise, tonkatsu sauce, bonito flakes and seaweed.
