Ingredients

600gchicken thighs, skin on, cut into cubes
4spring onions, cut into lengths
100mlsoy sauce
50mlmirin
50mlsake
2 tbspsugar

Method

1

Make tare: combine soy, mirin, sake and sugar. Simmer until slightly thick.

2

Thread chicken onto soaked bamboo skewers, alternating with spring onion.

3

Grill over charcoal, basting with tare every 2 minutes, for 10-12 minutes.

Chef's Tip

Baste and turn frequently — the tare builds up in layers, creating the glossy, caramelised finish.
