Paya

Pakistan

The healing food of Pakistan. Eaten at dawn from stalls open before any other. Believed to strengthen bones and joints.

Slow-simmered trotters — goat or beef trotters cooked overnight in a richly spiced broth until the collagen dissolves into a thick, gelatinous, deeply nourishing soup.
