Samgyeopsal means three-layer meat — the three visible layers of fat and meat in pork belly. It is South Korea's most popular restaurant dish, eaten communally.
Korea's most convivial meal — thick pork belly grilled at the table on a charcoal grill, wrapped in lettuce with garlic, chilli paste and perilla leaves. Pure shared pleasure.
Heat table grill or cast-iron griddle to high.
Place pork belly on grill. Cook without moving until fat renders and underside is golden, 3-4 minutes.
Flip. Cook 3 more minutes. Cut into bite-sized pieces with scissors at the table.
Grill sliced garlic and chilli alongside until lightly golden.
To eat: place pork in lettuce or perilla leaf, add garlic, chilli and dab of ssamjang. Wrap and eat in one bite.
Pork belly on a charcoal grill has a smokiness a gas grill cannot replicate. A cast-iron griddle on the hob is the best home substitute.
