Khao Soi

Thailand

Khao soi reflects Chiang Mai's position along historic trade routes, its curry base showing clear influence from neighbouring Myanmar and Yunnan cuisine.

A rich, creamy Northern Thai curry noodle soup topped with crispy fried noodles — a beloved specialty of Chiang Mai, layering soft and crunchy textures in one bowl.
