Baked flaky pastry filled with potatoes and onion or pumpkin — the vegetarian version of samsa, eaten at breakfast and as a tea accompaniment.
Make dough. Chill. Mix potato, onion and pepper for filling.
Roll dough thin. Fill squares with potato mix. Fold into triangles.
Glaze and bake at 200°C for 20-25 minutes.
Grate the potato raw — it cooks from raw inside the pastry during baking.
