Viennese bakers judge their skill by how thin they can stretch a strudel dough.
The definitive apple strudel — tissue-thin handmade dough filled with sweet spiced apple, raisins and breadcrumbs. Vienna's greatest dessert.
Make dough: mix flour, water, oil and vinegar. Knead 10 minutes until silky. Rest 30 minutes.
Mix apples, sugar, cinnamon and raisins.
Stretch dough on a floured cloth until paper-thin.
Scatter breadcrumbs over. Add apple in a line. Brush edges with melted butter.
Roll up using the cloth. Brush all over with butter. Bake at 190°C for 35 minutes.
The dough should be thin enough to read a newspaper through — work from the centre outward.
