Istria is famous for white truffles — among the finest in Europe — and fuži is the vehicle for them.
Istrian hand-rolled pasta — tubular, quill-shaped pasta made by rolling squares of pasta around a stick. Served with truffles or wild boar ragù. The signature pasta of Istria.
Make pasta dough. Rest 30 minutes. Roll thin. Cut into small squares.
Roll each square around a thin rod diagonally to form a quill.
Cook in salted boiling water 3-4 minutes. Toss with butter and shaved truffle.
Fresh fuži cook quickly — taste from 3 minutes and don't overcook.
