Czech version of Russian medovik, so distinct it is claimed as their own.
Czech honey cake — layers of thin honey sponge sandwiched with toffee cream, coated in cream and crushed biscuit crumbs. Rich, aromatic and deeply Czech.
Melt butter, honey and sugar. Cool. Add eggs, flour, bicarbonate and spice.
Divide into 8 portions. Roll thin. Bake each at 180°C for 5 minutes. Cool.
Whip cream. Fold in caramel. Sandwich layers with cream. Coat outside with biscuit crumbs.
Make the cake 1-2 days ahead — the layers soften as the cream is absorbed, improving the texture.
