Satsivi

Georgia

Satsivi is a centrepiece of Georgian Christmas and New Year celebrations, traditionally served cold as part of a lavish supra feast.

Cold poached chicken bathed in a rich, garlicky walnut sauce spiced with Georgian blue fenugreek — a striking, deeply flavoured festive dish.

Ingredients

1whole chicken, jointed
300gwalnuts, ground
4garlic cloves, crushed
1 tspblue fenugreek
1 tspground coriander
500mlchicken stock

Method

1

Poach chicken in stock until fully cooked, about 30 minutes. Reserve the stock.

2

Blend ground walnuts with garlic, fenugreek, coriander and enough reserved stock to make a thick, pourable sauce.

3

Simmer the sauce gently for 10 minutes, stirring often.

4

Pour sauce over the chicken pieces and chill for several hours before serving cold.

Chef's Tip

Simmer the walnut sauce gently, stirring constantly — it can split if boiled too vigorously.
