Originally Alsatian, claimed by both Germany and France. The name means flame cake — baked directly in a wood-fired oven's flames.
Alsatian flame cake — paper-thin crispy dough spread with crème fraîche, onion and lardons. Germany's answer to pizza, baked in seconds in a very hot oven.
Make dough. Rest 20 minutes. Preheat oven to 250°C with a baking tray inside.
Roll dough paper thin. Spread with crème fraîche. Top with onion and lardons.
Slide onto hot tray. Bake 10-12 minutes until edges blister and char.
The oven must be at maximum temperature — blistered edges are the goal.
