Tzatziki

Greece

Derives from the Turkish word cacik — Greeks and Turks each believe theirs is the original version.

Greece's cooling cucumber and yoghurt dip — strained yoghurt with grated cucumber, garlic and dill. The essential companion to souvlaki and mezze.

2-3garlic cloves, finely grated
2 tbspfresh dill
2 tbspextra virgin olive oil
1 tbspwhite wine vinegar

Method

2

Mix with yoghurt, garlic, dill, oil and vinegar.

Chef's Tip

Straining the cucumber twice is the most important step — wet cucumber makes watery tzatziki immediately.
