Chicken paprikash (paprikás csirke) is Hungary's most internationally recognised dish after goulash. It was created when paprika became widely available in Hungary in the 18th century.
Hungary's most comforting dish — chicken braised in a rich paprika and soured cream sauce until silky and deeply flavoured. Served over egg noodles or spaetzle.
Brown chicken pieces in lard. Remove.
Fry onions until golden. Off heat, add paprika and stir.
Return to heat. Add peppers and tomatoes. Cook 5 minutes.
Return chicken. Cover and cook on low heat 35 minutes.
Remove chicken. Stir flour into soured cream, whisk into sauce.
Simmer gently 5 minutes. Return chicken. Serve over egg noodles.
The paprika must be fresh and good quality — Hungarian sweet paprika has a completely different depth to ordinary supermarket paprika.
