Gremolata

Italy

Gremolata is the traditional finish for osso buco alla milanese. The raw lemon, garlic and parsley cut through the rich, marrow-filled stew.

A zesty Milanese mix of parsley, lemon zest and garlic. A sprinkle over osso buco, grilled meat or fish for a burst of freshness.

Ingredients

1 large bunchflat-leaf parsley, leaves finely chopped
2unwaxed lemons, zested
2garlic cloves, very finely chopped
pinchflaky sea salt

Method

1

Chop the parsley very finely until almost dry — damp parsley turns soggy.

2

Mix with the lemon zest and garlic.

3

Season with a pinch of salt just before serving.

4

Sprinkle over osso buco, roast lamb, grilled fish or risotto.

Chef's Tip

Use a microplane for the zest to avoid the bitter white pith. Make it just before serving — it loses its punch within an hour.
