Called snert in Dutch slang, eaten on ice-skating days when the canals freeze.
Dutch split pea soup so thick a spoon stands upright in it. Eaten on cold winter days with rye bread and smoked sausage.
Soak peas overnight. Drain.
Cover pork with cold water, bring to boil. Skim.
Add peas, celery, leek, potato and celeriac. Simmer 2 hours until very thick.
Remove pork, shred and return. Season.
Serve with sliced rookworst and dark rye bread.
The soup must be so thick that a ladle held sideways doesn't drip.
