Boerenkool met worst — kale stamppot with sausage — is the most beloved Dutch winter dish.
The ultimate Dutch comfort food — potatoes mashed with kale, sauerkraut or endive, served with smoked sausage and gravy.
Boil potatoes until tender. In last 5 minutes add kale to water.
Drain well. Mash with warm milk, butter and nutmeg.
Fry onion until soft. Grill or steam the sausage.
Serve stamppot topped with sausage and a well of gravy.
Drain very thoroughly — excess water makes the mash sloppy.
