Brunost

Norway

Made by simmering whey until the milk sugars caramelise. Technically a whey product, not cheese. Its sweet flavour is unlike any other cheese tradition in the world.

Norwegian brown cheese — a caramel-sweet whey cheese unlike anything else in the world. Shaved onto crispbread or waffles for breakfast.
