Norway is one of the world's largest exporters of cod and has eaten it simply poached for over a thousand years.
Norwegian poached cod — the simplest way to eat Norway's most abundant fish. Cod poached in salted water, served with melted butter, carrots and potatoes.
Bring water to a rolling boil. Add salt. Reduce to a bare simmer.
Add cod. Poach 8-10 minutes until just opaque and barely flaking.
Lift carefully. Serve with boiled carrots and potatoes, melted butter and parsley.
Salt the water generously — Norwegian tradition uses very salty poaching water, which seasons the cod perfectly.
