Vareniki are shared across Russia, Ukraine and Belarus, with each country claiming deep historical ties to the beloved dumpling.
Soft dumplings filled with potato, cheese or cherries, boiled until tender and often finished with a topping of butter or sour cream — beloved across Russia and its neighbours.
Make a firm dough from flour, egg and water. Rest 20 minutes.
Roll thin, cut into rounds, and fill with mashed potato or curd cheese.
Fold into half-moons, sealing the edges firmly.
Boil in batches until they float, about 4-5 minutes, then serve with melted butter.
Seal the dumplings very firmly by pressing and crimping the edges to stop the filling escaping during boiling.
