Cocido Madrileño

Spain

Madrid's defining dish. Served in three courses called vuelcos — turns of the pot.

Madrid's great chickpea stew — chickpeas, three types of meat, marrow bone and vegetables, served as three separate courses. The Sunday dish of every madrileño family.
