Cinnamon Buns

Sweden

Cinnamon buns are so central to Swedish culture that the country celebrates Kanelbullens Dag, Cinnamon Bun Day, every October 4th.

Soft, spiced Swedish sweet buns rolled with cinnamon and butter, twisted into their distinctive knot shape — the centrepiece of Swedish fika.

Ingredients

500gflour
7ginstant yeast
250mlwarm milk
100gbutter, softened, plus extra for filling
2 tbspcinnamon
pearl sugarfor topping

Method

1

Make a soft dough from flour, yeast, milk and butter, and prove until doubled.

2

Roll out and spread generously with softened butter and cinnamon sugar.

3

Fold and twist into the traditional knot shape, then prove a further 30 minutes.

4

Bake at 200C for 12-15 minutes, and sprinkle with pearl sugar while still warm.

Chef's Tip

Work with the dough while it's still a little cool from proving — warm, soft dough is harder to twist into a neat knot shape.
