Rösti was originally a farmhouse breakfast in the canton of Bern.
Swiss pan-fried potato cake — shredded and pressed until crispy and golden outside, soft within. The national potato dish of Switzerland.
Grate potatoes coarsely. Season with salt.
Melt butter in a wide heavy pan. Add potato and press into an even round.
Cook over medium heat 10 minutes without disturbing.
Flip onto a plate, then slide back into the pan. Cook 10 more minutes until golden.
Parboiling the potatoes before grating is the Swiss method — it helps rösti hold together.
