The origin is disputed between Ukraine and Russia. It became one of the 20th century's most internationally famous dishes.
Chicken breast wrapped around cold herb butter, coated in golden breadcrumbs and fried until the crust is crispy and the butter bursts out in a river of garlic and parsley.
Mix butter with garlic and parsley. Shape into a log. Freeze 30 minutes.
Butterfly each chicken breast. Place frozen butter in centre. Fold and seal tightly.
Coat in flour, then egg, then breadcrumbs. Refrigerate 1 hour.
Deep-fry at 170°C for 12-15 minutes until golden and cooked through.
Rest 2 minutes. Warn guests to cut carefully — the butter jets out.
The butter must be frozen solid before wrapping — liquid butter leaks during coating.
