The Ukrainian New Year dish. Families begin making it on 30 December because the long cooking time means it is ready on New Year's Day.
Ukrainian meat jelly — pork knuckle and chicken simmered for hours until the natural gelatin sets the cooled broth into a crystal-clear aspic. Served with horseradish.
Cover pork and chicken with cold water. Bring to boil. Skim very thoroughly.
Add carrot, onion, bay and peppercorns. Simmer 4-5 hours very gently.
Remove meats. Strain broth. Crush garlic into strained broth.
Shred meats. Arrange in a dish. Pour broth over. Refrigerate overnight until set.
Serve cold with horseradish.
Skim the broth obsessively in the first 30 minutes — a clear kholodets is a matter of pride.
