Created in Glasgow in the 1970s by Ali Ahmed Aslam. Officially Britain's most eaten dish.
Britain's most popular curry — chargrilled chicken tikka in a rich, creamy tomato and spice sauce. Created by British-Indian restaurants and now claimed as the national dish.
Marinate chicken in yogurt and tikka spice. Grill or griddle until charred.
Fry onion, garlic, ginger. Add tomatoes. Simmer 15 minutes. Blend smooth.
Add cream, fenugreek and chicken. Simmer 10 minutes.
Charring the chicken before adding to the sauce is essential — the smoke is part of the flavour.
