Lamb with mint sauce is one of the oldest flavour pairings in English cooking. The sharp vinegar cuts through the richness of the meat and the herb keeps it fresh.
A sharp, sweet and herby British condiment of fresh mint, vinegar and sugar. The traditional partner for roast lamb.
Finely chop the mint leaves with the sugar — the sugar helps break down the leaves.
Put in a small bowl and pour over the boiling water. Stir until the sugar dissolves.
Add the vinegar and a pinch of salt. Leave to stand for at least 30 minutes before serving so the flavours meld.
Keeps in the fridge for up to a week.
Use fresh garden mint (not spearmint-flavoured anything) and chop it as finely as you can. Taste before serving and balance sweet and sour to your liking.
