Celebrated each January, timed to the sun's transition into the Northern Hemisphere and the corresponding harvest season, Pongal stands as one of South India's most significant festivals, taking its name directly from the dish that defines it. Pongal, a rice preparation boiled with milk and jaggery until it overflows the cooking pot, symbolises abundance itself — the overflowing pot is considered an auspicious sign for the coming year, and families gather specifically to watch and celebrate the moment it happens.

The four-day festival unfolds in distinct stages, each honouring a different element of Tamil agricultural life: Bhogi marks the start with the discarding of old belongings, Thai Pongal itself centres on the cooking and offering of the sweet rice dish to the sun god Surya, Mattu Pongal honours cattle for their role in farming, and Kaanum Pongal closes the festival with family visits and gatherings. Sweet Pongal, made with jaggery, cashews and raisins, and savoury versions built around pepper and cumin both appear on festival tables, reflecting the dish's genuine versatility beyond its ceremonial role.

For visitors interested in South Indian harvest traditions specifically, distinct from the pan-Hindu celebrations of Diwali and Holi more commonly documented internationally, Pongal offers a rare, deeply agricultural festival where the signature dish and the celebration itself share the very same name.
