Held every autumn at the Kursaal Congress Centre in San Sebastián, Gastronomika holds the distinction of being the world's first international gastronomy congress, and it remains one of the most respected gatherings in global fine dining. The Basque city itself, with more Michelin stars per capita than almost anywhere else on earth, provides a genuinely fitting home for an event that brings together celebrated chefs, food critics, academics and industry professionals for several days of masterclasses and high-level discussion.

Past speakers have included some of the most influential figures in modern cuisine — René Redzepi, pioneer of New Nordic cooking; José Andrés, ambassador of Spanish cuisine in the US; and Yoshihiro Narisawa, a leading figure in sustainable Japanese fine dining, among many others. Beyond the conference sessions, more than 200 stands outside the theatre let producers, food-tech companies and small-scale artisans present their work directly to attendees, giving the event as much focus on cheesemakers and fishermen as on Michelin-starred kitchens.

Given its role in launching what became known as New Basque Cuisine, a movement that reshaped Spanish fine dining, Gastronomika carries a genuine historical weight beyond most food festivals — less a celebration of what already exists than a forum for shaping what comes next.
