Held annually at the ski resort of Bukovel in the Ukrainian Carpathians, the Varenyky Festival celebrates a dish that Ukrainians consider far more than simple food — in folk tradition, the crescent shape of the varenyk was likened to a young moon, and the dumplings were once used as offerings in pagan and harvest rituals believed to bring abundance and fruitful crops. Peasants traditionally carried homemade varenyky out to the fields as a symbol of the hoped-for harvest.

At the festival, this deep cultural attachment is celebrated with genuine spectacle: in one notable edition, organisers built an enormous snow sculpture of a varenyk, recognised by Bukovel's own hotel as the biggest snow varenyk in the world. Beyond the sculpture, visitors can sample the dumpling in its full range of traditional fillings, from potato, cabbage and mushroom to sweet cherry and cottage cheese, the latter said to have won over even a visiting Bill Clinton, who reportedly declared Ukrainian varenyky a dish that must always be served.

Set against Bukovel's mountain scenery, the festival gives winter visitors to the resort a genuinely cultural counterpart to the skiing itself — a chance to encounter a dish so central to Ukrainian identity that an annual 'Golden Varenyk' award has, since 1999, recognised the country's finest cooks and confectioners in its honour.
