Elmira Maple Syrup Festival

Held each April in the small town of Elmira, Ontario, roughly an hour from Toronto in the Waterloo Region, the Elmira Maple Syrup Festival has run since 1965 and holds the Guinness World Record for the largest single-day maple syrup festival anywhere in the world. Organisers of that very first festival hoped for a modest crowd of 2,500 people; instead, 10,000 showed up, and the event has continued to grow ever since, drawing over 66,000 visitors in the year it set its Guinness record and regularly exceeding 80,000 in recent editions.

The day begins early with a pancake breakfast at the local Lions Hall, followed by sugar bush tours that take visitors by bus to local farms to see the entire maple syrup process explained on-site, from tapping the trees to boiling down the sap. A team of more than 2,000 volunteers, drawn largely from Elmira's own Mennonite-heritage community, coordinates a day that includes log-sawing competitions, wagon rides, quilts and handicrafts, and — inevitably — enormous quantities of pancakes served with fresh, locally produced syrup.

Given Canada produces roughly 85 percent of the world's maple syrup, with Ontario a significant contributor alongside Quebec, Elmira's festival offers a genuinely authoritative, community-run celebration of the country's most iconic natural product — one that has, quite remarkably, outgrown its own small-town population many times over on a single day each spring.
