Held each August in San Lorenzo, in the western department of Ahuachapán, the Loroco Festival celebrates an aromatic edible flower that has been cultivated in the surrounding highlands for decades. Loroco, with its distinctive earthy, slightly bitter flavour, is one of El Salvador's most treasured native ingredients, most commonly worked into pupusas alongside cheese, but genuinely versatile across a much wider range of dishes.

Local artisans use the festival to demonstrate just how far that versatility extends, transforming loroco into tacos, breads, creams and sauces, while entrepreneurs experiment with frozen desserts, pestos, salsas and even loroco-based drinks, pushing the flower well beyond its traditional pupusa filling role. Visitors can also purchase packaged loroco products to take home, including pickles and frozen goods, giving the festival a genuine economic role in supporting the small producers who cultivate the plant.

For visitors curious about Salvadoran cuisine beyond the pupusa itself, San Lorenzo's Loroco Festival offers a focused introduction to one of the country's most distinctive native ingredients — a flower that, outside Central America, remains almost entirely unknown, making the festival a genuinely rare opportunity to explore it in depth.
