Observed every second Sunday of November since being officially established by the Salvadoran Legislative Assembly in 2005, National Pupusa Day honours the thick, stuffed corn or rice-flour flatbread that Salvadorans declared their national dish that same year. Pupusas trace back nearly 2,000 years to the indigenous Pipil people of western El Salvador, who originally made half-moon-shaped versions with vegetarian fillings, long before the dish spread into the round, griddle-cooked form found across the country today.

The town of Olocuilta, southeast of San Salvador and known specifically for its distinctive rice-flour pupusas, serves as the epicentre of the national celebration, drawing thousands of visitors eager to taste its crisp, rice-based version of the dish. Olocuilta made international headlines in 2015 when the town's city hall prepared a pupusa measuring 4.5 metres in diameter, recognised by Guinness World Records as the largest ever made — a record the town has continued to push further in subsequent editions of the festival.

Given pupusas were added to UNESCO's list recognising El Salvador's intangible cultural heritage, National Pupusa Day carries a significance well beyond a simple food celebration — a day when pupusa-eating contests, live music and community gatherings across the country collectively affirm a dish that has become genuinely inseparable from Salvadoran national identity, at home and throughout the diaspora.
