Held each October in San Pedro Atocpan, a town in the rural Milpa Alta borough of southern Mexico City, the Feria Nacional del Mole celebrates a sauce widely considered the truest expression of Mexican mestizo cuisine, blending indigenous chile-based sauces with spices introduced after the Spanish conquest. San Pedro Atocpan itself produces around 90 percent of the mole consumed across Mexico, making it the undisputed capital of a dish with more than 50 regional varieties nationwide.

The festival draws over 500,000 attendees, making it one of Mexico's most significant food festivals by any measure, with roughly 40 restaurants and over 100 stands filling the town with thousands of mounds of mole paste in every variety — from the deep, chocolate-and-chile black moles of Oaxaca to the milder coloradito and the fresh, herb-forward green moles found elsewhere in the country. Visitors can tour workshops where mole is made entirely by hand, from toasting and grinding to the final mixing, alongside folk art displays, traditional dance and live music that fill out the festival's broader cultural programme.

Given mole's centuries-old roots in Aztec cooking — the Nahuatl suffix '-molli' simply meant sauce — San Pedro Atocpan's festival offers a rare, genuinely national celebration of a dish that carries as much history and identity as it does flavour.
