Brought to Israel by Sephardic Jews from Bulgaria and Turkey. Now a cornerstone of Israeli food culture.
Israeli Sephardic pastries — flaky puff or filo pastry filled with cheese, spinach or potato, topped with sesame seeds. The essential Israeli bakery item.
Mix cheese with spinach and egg.
Cut pastry into squares. Fill with cheese mix. Fold into triangles.
Brush with egg. Top with sesame.
Bake at 190°C for 20-25 minutes until golden.
Fill generously — underfilled bourekas are disappointing.
