Brought to Israel by Yemenite Jews. Now eaten by all Israelis, particularly on Saturday mornings.
Yemenite flaky flatbread — a laminated Yemenite dough fried until the layers separate and crisp. Eaten with tomato salsa, hard-boiled egg and z'hug chilli paste for breakfast.
Make a soft dough. Rest 30 minutes. Divide into balls.
Flatten each ball. Spread butter over. Fold into layers. Flatten again.
Freeze 30 minutes.
Fry in a pan over medium heat 4-5 minutes each side until golden and flaky.
The freezing step sets the layers — unfrozen malawach fries flat rather than separating.
