Found throughout the Arabian Peninsula and East Africa. The Saudi version at Ramadan iftar is eaten by the dozens.
Saudi fried pastries — triangle-shaped pastries filled with spiced beef, cheese or spring onion, deep-fried until golden. Eaten throughout Ramadan to break the fast.
Fry mince with onion and spices. Cool.
Place filling on a strip of wrapper. Fold into triangles. Seal with flour paste.
Deep-fry at 170°C until golden.
Drain and serve immediately.
The seal must be thorough — unsealed edges open in the oil and the filling spills.
