Ingredients

50preserved vine leaves, rinsed
300glamb mince
150gshort grain rice
1 tsp eachallspice, cinnamon, black pepper
2 tbspbutter, melted
juice of 3lemons
300mlwater
saltto taste

Method

1

Mix lamb mince with rice, spices, melted butter and salt.

2

Lay vine leaves flat, shiny side down. Place a teaspoon of filling near the stem.

3

Fold the sides in, roll from stem end into a neat cigar. Do not roll too tightly — the rice expands.

4

Line the bottom of a heavy pot with spare vine leaves.

5

Pack stuffed leaves tightly in layers, seam-side down.

6

Pour lemon juice and water over. Place a heavy plate on top to keep them compact.

7

Simmer on low heat 1 hour.

Chef's Tip

Do not roll too tightly — the rice must have room to expand or the vine leaves will burst.
