Made throughout the Levant. Syrian families spend entire afternoons rolling them together.
Syrian stuffed vine leaves — grape leaves filled with rice, herbs and lamb, cooked in a lemony broth until tender. A labour of love that defines Syrian home cooking.
Mix rice, lamb, herbs, tomatoes, oil, salt and allspice.
Place a spoonful on each vine leaf. Roll tightly, tucking in the sides.
Layer in a pot. Cover with water and lemon juice. Weigh down with a plate.
Simmer covered for 60 minutes.
Serve with yogurt.
Roll tightly but not so tight the rice has no room to expand during cooking.
