Ingredients

6aubergines, halved and part-fried
400gminced beef
1onion, diced
2tomatoes, diced, plus more for topping
2green peppers, sliced

Method

1

Fry aubergine halves briefly until softened, then arrange in a baking dish.

2

Brown mince with onion, then add diced tomato and cook down slightly.

3

Split each aubergine down the centre and fill generously with the meat mixture.

4

Top with extra tomato and pepper slices, and bake at 190C for 30-35 minutes until tender.

Chef's Tip

Frying the aubergine briefly before stuffing softens it enough to hold the split shape without collapsing.
