Turkish delight, known locally as lokum, has been made in Turkey since at least the 15th century, and became known in the West partly through 19th-century trade.
A soft, chewy Turkish confection flavoured with rosewater or citrus and dusted generously in icing sugar — an elegant sweet with centuries of history.
Dissolve sugar in half the water and bring to a soft-ball stage on a sugar thermometer.
Separately, cook cornflour, cream of tartar and remaining water into a thick paste.
Slowly combine the sugar syrup into the cornflour paste and cook together, stirring constantly, for 45 minutes until thick and translucent.
Stir in rosewater, pour into a tray, and leave to set overnight before cutting and dusting with icing sugar.
Patience is essential during the long cooking stage — rushing it produces a paste that never fully sets to the right chewy texture.
