A French-Canadian breakfast staple for generations, cretons remains a fixture of Québec's cabane à sucre (sugar shack) spreads.
A rustic Québécois pork spread seasoned with onion, cinnamon and cloves, traditionally slathered on toast for breakfast — rich, savoury and gently spiced.
Combine pork, onion, milk and spices in a saucepan with a little water.
Simmer gently, stirring occasionally, for 1 hour until the pork is very soft and much of the liquid has absorbed.
Mash with a fork until spreadable but still slightly textured.
Pack into a dish, cover, and chill overnight before serving on toast.
Chilling overnight lets the fat set and the spices mellow — cretons taste better the next day.
