Nanaimo bars appeared in Canadian cookbooks in the 1950s, named after Nanaimo, BC. They are now sold across Canada and are considered one of the country's defining foods.
Canada's most famous no-bake treat — three layers of chocolate, custard buttercream and chocolate ganache. Rich, sweet and completely irresistible. Named after the city of Nanaimo, British Columbia.
Base: melt butter, sugar and cocoa in a bowl over hot water. Add egg and stir until thick. Mix in biscuits, coconut and walnuts. Press into a lined 20cm square tin. Chill.
Middle: beat butter, cream and custard powder until fluffy. Beat in icing sugar. Spread over base. Chill 15 minutes.
Top: melt chocolate and butter together. Pour over middle layer. Smooth.
Refrigerate until set, at least 1 hour.
Cut into squares with a hot knife.
A hot knife (run under hot water) makes clean cuts without cracking the chocolate top.
